Easter 2010

Happy Easter Everyone!

Hoping that you're blessed with the same gorgeous weather as we are in Kansas City.


Charlie spent the morning watching over the neighborhood and I got ready for our Easter dinner with family.

I thought I'd share one of my Easter traditions, pineapple stuffing. This recipe has been made every Easter, starting with my great-grandmother. It's perfect with ham and super easy to make. Let's face it, I'm no Martha Stewart in the kitchen, so the easier; the better.


Pineapple Stuffing
1/2 cup sugar
1 cup butter
6-8 slices of bread, cubed
4 medium eggs
1 can of crushed pineapple

Cream sugar and butter together. Add in one egg at a time. Add in pineapple, do not drain.
Fold in bread cubes. Place in greased 1 1/2 quart casserole dish and bake at 350 degress for ane hour. Serve warm or cold.

Definitely perfect here in Wichita. My friends wedding is in 2 weeks (outdoors) and I hope and pray that the weather could be like today! It's so beautiful!
